 The current proprietors of the Vecchia Roma are Ernesto (Maître d) and Adolfo (executive Chef) and along with there team will do their up most to make sure you have a memorable visit.
Ernesto has been at the Vecchia Roma for over 25 years, he has been providing the same consistent exceptional service to his clients for this entire course and instilling this into his staff since day 1. He is very passionate about his role and along with Adolfo are the backbone making the Vecchia Roma what it is today.
Adolfo has been the executive Chef since the very beginning. He has run the kitchen since opening in May 1972. Adolfo has extensive knowledge in Italian and continental cusine and has continually adapted to his clients desirers out performing expectations everytime. He takes great pride in what he does and inspects every dish that leaves his kitchen.
